There are several things about my mother that I will always remember. She always made sure I was ready to go to school in the morning and she was always there to pick me up after soccer practice.
In addition to being a personal driver, my mom had some of the best cooking in town. While I might be a bit biased on the subject, she killed every single meal of the day. However my best memories come from the deserts she made. More specifically, the memories of her banana cake recipe are some of the best I have.
My favorite part of my mother’s banana cake came in two different areas. First, I was no different than any other child and I was a huge fan of the frosting. She made some special cream cheese frosting and never released the recipe to anyone. It was a custom frosting that she had developed over the years and it would possibly cause heart attacks to the least suspecting individuals. That’s how good it was! If it’s that good it defiantly can’t be healthy for you. That’s how my mom liked to cook. Fill stuff up with sweets and worry about things later.
The second part that was delicious was the actual cake part of the banana cake. The cake was so moist it would literally melt in your mouth. It did not matter if she had just made the cake or if the cake had been around for a day or two. Though, normally the cake never lasted that long. I once named the recipe as a child. As funny as it sounds, it was named “banana cake recipe moist”. Of course, I could barely speak properly as a child and it was much harder when I was stuffing my face full of cake. I miss my mother and I miss her banana cake. However, it is a great memory to have of her.
